2021 'Sea Spray' Blanc de Noirs Sparkling Wine


Crafted from Pinot Noir grown in select blocks of our estate vineyard, Sea Spray begins with an early harvest, capturing remarkable freshness and vitality before the main Pinot Noir harvest is underway.

Aging sur lie in barrel, followed by extended time en tirage, lends depth and nuance to the wine. The result is a vibrant sparkling expression marked by fine texture, lifted energy, and a lingering finish that echoes the estate's coastal character.

    Sea Spray opens with a bright and expressive bouquet of Meyer lemon, grapefruit, and fresh quince layered with notes of crème brûlée, cashew, and delicate pie crust. The palate offers an energetic freshness and creamy mousse, revealing vibrant citrus, lime pith, and subtle rosehip flavors that unfold alongside hints of brioche and saline minerality. Bright and expressive, this wine balances tension and finesse with remarkable clarity.

  • Winemaking

    Crafted from select Pinot Noir blocks on our estate vineyard, this Méthode Traditionelle sparkling wine began with an early harvest to retain vibrant acidity and freshness. The fruit was hand-harvested at night and gently whole-cluster pressed to capture the free-run juice. After five days of stabulation, where the juice is stirred every day to capture flavor, fermentation occurred at cool temperatures in stainless steel to preserve aromatics. The
    base wine is aged sur lie for 12 months without sulphur dioxide in neutral French oak demi-muids, 600-liter barrels with thick staves that limit oxidation of the wine, before secondary fermentation in bottle and 39 months en tirage. Disgorged in March 2026, the wine rested for 10 months under cork, revealing the vintage’s clarity and elegance.
